Learning Objectives: Upon successful completion of this course, the student will be able to: 1. Name the three macronutrients and selected micronutrients of concern, where you find them in foods, their dietary recommendations, and explain how they contribute to a healthy diet and body 2. Describe how dietary intake may need to be modified based on special situations like vegetarianism, lactose intolerance, or a gluten-free diet 3. Evaluate sources of nutrition information and distinguish between credible sources and junk science 4. Use tools, including MyPlate, Harvard Healthy Eating Plate, and the Dietary Guidelines for Americans for evaluating personal dietary intake and planning a healthful diet 5. Critically evaluate and compare nutrition labels and determine the nutrient density of each food 6. Explain the challenges and best practices related to body weight management and its relationship to physical and mental health 7.
