Learning Objectives: Upon successful completion of this course, students will be able to: 1. Apply math basics pertaining to culinary arts – including fractions, percents, proportions, word problems, unit analysis 2. Use customary units of measure – both United States and metric units 3 Use math for applications of yield percent, cost, recipe conversions, recipe costing, nutritional labels, edible portion and as-purchased quantities, unit costing 4.
