Learning Objectives: Upon successful completion of this course, the student should be able to: 1. Know reasons and principles of proper personal hygiene, safe and effective food handling, and proper and effective cleanliness and sanitation. 2. Understand food contaminants and their prevention. 3. Know proper storing and processing of raw food products; proper heating, cooling, and storage of cooked foods. 4. Know proper kitchen and equipment sanitation procedures. 5.
